Calabrian chef Salvatore Morello brings a breath of fresh air to the city synonymous with gastronomy. Drawing on an international background, he presents a cuisine that weaves together recipes and ingredients from diverse culinary worlds, united by finesse, personality, and a striking cohesion. Exceptional raw materials, occasionally accented by exotic notes, find precise balance in every course. Special mention goes to the bread program: the loaf, crafted from sourdough and minimally refined flours and baked in a cast-iron pot, captivates with its pronounced crust and unexpected lightness. Chef Giacomo Devoto from Sarzana has transformed an old 17th-century farmhouse, surrounded by greenery, into a charming inn complete with rooms and a working farm, where tranquillity and hospitality reign. The recipes, imaginative yet firmly rooted in the seasons, rest on the fragrance of the ingredients: vegetables – like the extra virgin olive oil – come largely from his extensive kitchen garden, while proteins are selec

The historic family restaurant on the Ligurian Levant sees young Matteo in the kitchen, marking the fifth generation of Rezzano involved in this field. Between the sea and the railway, an open-space restaurant with a minimalist, contemporary design welcomes guests with its open kitchen, where chef and owner Ivan Maniago and his team transform ingredients from Liguria into sensory experiences. The philosophy is clear: 90% of the products come from small local producers. Three tasting menus offer an original interpretation of Liguria: Altitudine, a jouney from the coast towards inland Liguria; Profondità, an immersion in the wonders of the sea; and Vege-table, dedicated to green freshness.

Situated in the beautiful countryside outside Cerreto Guidi, Villa Petriolo is a magnificent Medici residence offering luxurious rooms in a setting of outstanding charm. In addition to the beauty of the villa and its garden, overlooked by the restaurant’s terrace, the location benefits from the property’s delicious home-produced ingredients, such as extra-virgin olive oil, wine, Cinta Senese pork, meat and chicken, produce from the kitchen garden and ancient grains. The kitchen reinterprets these rich ingredients with a modern twist, offering two tasting menus — one of which for vegetarians —
