The up-and-coming former industrial district of Kanalbyen plays host to this contemporary, design-led restaurant on the ground floor of a modern apartment building at the water’s edge; take in the view over the Lillebælt Strait, while the service team look after your every need. Behind the scenes Michael Nørtoft creates refined, technically accomplished fish and vegetable dishes with deceptively simple names – maybe ‘brill, asparagus and ramson’ or ‘blackberries, cep and fennel' – which belie the complexity that goes into their creation. To complement are some interesting wine and juice pairin

This extraordinary building stands directly in the fjord and its unique interior is equally striking. Dinner is an engaging, multi-course affair that begins with snacks served at the gorgeous glass-topped bar. Then it’s through to the aptly named ‘Sail Room’ for the main event, though you may be taken to other areas of the building for some courses. The creative, sophisticated dishes showcase exceptional produce, including Limfjord mussels and wonderful local trout. The passionate service team help to make this a truly special destination.

The elegant, modern setting with a Nordic feel and the magnificent view over Flensburg Firth are exceptionally inviting from the outset. The visual appeal is topped only by Dirk Luther's wonderful set menu. Your anticipation builds as you enter and get a glimpse into the kitchen through the viewing windows. The classically based dishes are well thought out, displaying both depth and finesse, and place top-quality ingredients centre stage – outstanding examples include turbot and lobster from Denmark! The set menu is available in six or eight courses; for the six-course format, there are two st

Pearl by Paul Proffitt
Modern Cuisine · ★ Michelin

Head for the Flesborg Fjord, and at the water’s edge you’ll find this early-20th-century villa boasting a cosy bar, parquet floors and light wood furnishings. After almost a decade working at Henne Kirkeby Kro, British-born Paul Proffitt set upon his own in this most idyllic spot on the opposite side of south Jutland; book a space in the glass-cubed ‘Doris’ to watch him up close. Modern cuisine marries local produce and a little playful childhood nostalgia, in dishes such as dripping served with a buttery brioche, aged dairy cow tartare or a surf 'n' turf of sirloin with oyster cream.

You can make a night of it by booking one of the sumptuously stylish bedrooms at this traditional-looking 18th-century thatched inn – a bonus when you consider the depth of the extraordinary wine list, which offers plenty of options by the glass. Original, well-balanced and technically accomplished dishes oscillate between Danish traditions and more international influences, with satisfying options including the likes of roast scallop with grapefruit and mussels or grilled pigeon with cime di rappa and truffle. Lunchtime sees a lighter menu.

A former naval building right on the marina houses The James, a sophisticated hotel that is also home to this chic and elegant restaurant. The 7m-high ceiling and chandeliers draped in silk make quite an impression, as do the views of the marina from some of the seats. The exclusive atmosphere is enhanced by the friendly and attentive front-of-house team, who serve up Quirin Brundobler's modern, seasonal cuisine in the form of two set menus: "Farm" and "Fjord". His dishes, such as Hörup pork cheeks or lightly seared sole, may be pleasingly uncomplicated, but they are brimming with flavour. Muc

Set in the old Østerbro machine factory on the edge of town, ARO upholds the theme of having skilled craftsmen in its workshop. The room has a modern, industrial feel, courtesy of exposed ducting and industrial lighting, and the stark walls and floors are punctuated by black wooden furnishings and sketches pinned to chipboard panels. The atmosphere, too, is pleasingly laid-back, with both the service team and the chefs looking after the guests. Choose either a three- or seven-course set menu, where the chefs get playful with wonderfully fresh produce to create some interesting dishes with a st
