Seafood, Mediterranean Cuisine · ★ Michelin

A genuine gastronomic discovery: behind a menu of deliberately understated language lies a technique of great precision, placed entirely at the service of seafood of rare quality. Here, that oft-overused phrase “produce-led cuisine” finds one of its most fully realised expressions: the sea is evoked with an intensity and depth that is far from commonplace, its aromas enveloping a dining room of elegant simplicity, rendered in aquatic and sandy tones. The kitchen surprises with inventiveness and moments of near-inspired brilliance that emerge with quiet confidence. Within the Nautilus shipyard, stairs lead to the first floor attic dining room with windows overlooking the marina. Elegant and refined, also in service, chef Daniele Usai creates highly original seafood cuisine, distinguished above all by a skilful use of aromatic herbs, of which the chef is a true master and connoisseur, also of uncommon varieties. 4112 are the naval coordinates of the location, and the choice is no coincidence: we are in the vicinity of a shipyard, just a few metres from the Tiber, looking out onto the moored vessels. Chef Lele Usai (the same hand behind the starred Il Tino on the floor above) prepares here simpler and more traditional cooking, with seafood classics such as spaghetti alle vongole lupini and grilled fish, yet always with the same exacting attention to the quality of the catch, in an informal and relaxed setting of an almost holiday atmosphere, particularly at the outdoor tables.

Along the road that runs beside the Tiber canal, restaurants abound both before and after L’Osteria dell’Orologio, but do not miss this one, which stands out for the remarkable quality of its fish and shellfish. Dishes from the seafaring tradition are sometimes presented in their familiar form, sometimes in the more personal interpretations of the talented Marco Claroni.
