Contemporary, Modern Cuisine · ★ Michelin
€€€€
The Britannia Hotel’s grand dining room comes with glittering chandeliers, walls filled with mirrors and even a caviar bar – and that’s before mentioning the elegant service, the exceptional wine list and, of course, the highly skilled chef, whose strength lies in classical techniques. The intricate, meticulously prepared dishes showcase the richness of the Trøndelag region over three menus that feature seafood in winter and spring; vegetables and foraged ingredients in summer; and deeply flavoured game and preserved produce in autumn. Book the counter if you want to watch the action up close.

€€€€
There are several things this simple bistro shares with its more formal sister FAGN downstairs. The warmth of the welcome for one, as well as the use of the same top-quality produce. Where it differs is in its more laid-back atmosphere and the fact that the cooking has an unadulterated Norwegian base. A combination of glass and wood gives the room a bright but cosy feel, and a long wood counter provides views out over the city. Rustic, boldly flavoured dishes are generously proportioned, offering the likes of herring and potatoes with sour cream, browned butter, dill and red onion.

Striking eclectic art adorns the walls of the relaxed and trendy restaurant, while the adjoining wine bar offers an impressive array of bottles to choose from, with real depth to the list and numerous vintages from heavy hitting producers. The ten-course tasting menu offers modern, restrained cooking and original touches – like a deconstructed XO sauce – that enhance the dishes.

Set within the Brattøra waterside development, this large brasserie provides exactly the buzzing atmosphere you would hope for. Banquettes and a central bar fit the bill décor-wise, while visible ducting and terrazzo flooring lend an industrial edge. Choose from a set menu of either four or six courses, where a signature dish of scallops can be added as an extra – the accompaniments depend on the season, but could include the likes of sea buckthorn, XO and celeriac. It’s beautiful Norwegian seafood like this including, when available, skrei cod of course, that will be among the highlights of y
