Facing the monumental Plateresque façade of the church of the Convento de San Esteban, iconic for its stone altarpiece design, and wit two dining rooms featuring a contemporary atmosphere, the main one with an open kitchen to enjoy the different creative processes as they happen. Here the chef Rocío Parra, always well supported in the dining room and in the wine cellar by her husband (Alberto Rodríguez), remains faithful to a modern cuisine with local and traditional roots. Her proposal focuses on two tasting menus, Granito and Pizarra, whose name is a small tribute to the characteristics of t

In a location opposite the Palacio de Congresos de Castilla y León that is relatively easy to find despite being away from the city’s main tourist haunts, Víctor Gutiérrez, a chef who admits to having a 'Spanish soul and a Peruvian heart', showcases cuisine based around three strong principles: ingredients, technique and feeling. Now, ably supported in the kitchen by his daughters (Paula as head chef and Andrea as maître d'), he offers a fairly limited à la carte service and a single tasting menu called Raíces (14 courses) which reveal his full passion and an unquestionable splash of creativit

On the outskirts of this small town, inside an industrial-looking warehouse, there is a restaurant that stands out from the usual aesthetic of Castilian establishments, as it plays with design and a punk aesthetic with a religious background. it is no surprise that the incandescent grills in the open kitchen take centre stage and see themselves as ‘the church of embers, where tradition and avant-garde are forged’. The young chef Anaí Meléndez, who left the world of advertising for the restaurant business to return to her hometown, demonstrates great mastery in working with fire and offers visi

A modern gastro-bar with the soul of a restaurant located just a few metres from the city’s iconic Plaza Mayor. At Bambú, the open kitchen, traditional cuisine and grilled dishes reinterpreted from a more contemporary perspective are the main highlights, although you’ll also find hints of fusion and strong flavours from other parts of the world. Choose between tapas, half-plates and dishes designed for sharing, alongside an interesting tasting menu. Dishes we can recommend include the classic truffled duck egg, the highly original chicken chilli doughnut, the braised avocado with pipirrana, an

It has always been said that wheat (“trigo” in Spanish) is the gold of Castille, hence its historical importance to the region. The restaurant, located just a few steps from the cathedral, reflects the strong passion that chef Víctor Martín has for his cuisine. Alongside his wife Noemí Martínez, a renowned sommelier who runs the dining room, he focuses on creative and contemporary cooking with strong roots in tradition, and is based on his relationship with small suppliers and their superb local produce and ingredients (vegetables from Tudela de Duero, pigeon from Tierra de Campos, chestnuts fr

An interesting gourmet option in the centre of the city, located at the foot of the emblematic Santa María de La Antigua church, one of the indisputable icons of Valladolid architecture. The restaurant, preceded by a terrace that is almost always full of university students, features a contemporary yet informal gastro-bar (Crisol) where you can order the daily menu as well as fun dishes designed for sharing. The restaurant’s so-called gastronomic space, with its open-view kitchen and decorative details inspired by the molecular cuisine that has lent the restaurant the second half of its name, i

Local, ecologically minded ingredients, a focus on a zero-waste philosophy, artisanally produced crockery and support for local small-scale producers are all key here. In this restaurant, which occupies an impressively refurbished 200-year-old warehouse previously used to store flour, the team works according to a single mantra: 'cooking the past from the present, but with an eye on the future'. Fronted by Ávila-born chef Carlos Casillas, the restaurant features a kitchen visible from the dining room and boasts superb views of the city’s walls from the opposite bank of the River Adaja.
