For a truly unique experience, head for rural Wales and this matt-black house with an immersive approach and a mellow soundtrack. The evening starts early, which gives Chef-Owner Gareth Ward five hours to take diners on a playful culinary journey around the globe. He has a particular reverence for Japanese cuisine, with sashimi and A5 Wagyu beef likely to appear on the surprise menu of around 30 vibrant servings, all using outstanding produce prepared with superb craft. Regional sheepskins and handmade crockery show the team's pride in their Welsh locale, and you can extend your visit in one o

This warm and welcoming restaurant from the team behind Ynyshir is more of a cousin than a little sister – thanks to the personality Chef Corrin Harrison brings to both his cooking and the service. After a drink in the wine bar, all eight guests are served together in the intimate dining room. The surprise tasting menu offers bold flavours, a good dose of creativity and no small amount of skill. The team chat away with diners as the thoroughly enjoyable evening just flies by.

Set into the hillside, this attractive country house was built for a Lancashire industrialist around 1860 and is surrounded by beautiful terraced gardens and woodland. Its original features include a wood-panelled former billiards room, which now acts as the drawing room; follow this through into the restaurant, where you'll find the best seats are in the conservatory. The cooking's strength is drawn from the prime quality produce, be that Cornish monkfish or naturally delicious fruits for dessert. Stay overnight to make a proper occasion of your visit.

Nestled in the heart of a Welsh seaside town, this modern gastropub has a cosy, unpretentious feel with simple yet comfortable fixtures and fittings like faux-leather banquettes and padded velvet chairs. The cooking is underpinned by the chefs’ strong classical technique and skilled handling of prime seasonal produce; Highland venison with a textbook jus and girolles is the perfect example. There are comfortable rooms available if you’re looking to stay the night.
