Sushi Shunei
Japanese, Sushi · ★ Michelin

Located on Montmartre’s hill, this joint sports an elegant, minimalist interior that celebrates the aesthetic codes of Japanese restaurants: light wooden furnishings, a long counter and an amazing origami-inspired ceiling by an interior design firm. Chizuko Kimura and the Sushi master Takeshi Morooka pursue the legacy of Shunei Kimura, who made this eatery such a success. The omakase menu comes in two versions, which must be chosen when you book. Both embark the diner on a genuine sensorial experience courtesy of razor-sharp nigiris, a truly exceptional selection of fish, expert handiwork and

After stints in top establishments from New York to Paris, two veteran chefs now swap places every fortnight, taking turns in the open kitchen and the dining room. 100% bistronomic cooking from scratch using local, fresh, seasonal ingredients is the backbone of this bistro in the Abbesses neighbourhood. The menu, chalked up on a slate daily, is bang-on confident with a strong French bias and showcases deceptively simple recipes. ‘Ose’ means to dare – so what are you waiting for?

The charismatic and heavily tattooed Guillaume Sanchez crafts fiery, flame-licked cuisine in a stylish arty interior, dominated by black and gold and a profusion of untreated materials. Sanchez’ powerful yet balanced score is emblematic of his flamboyant personality. The chef has a knack for wielding explosive flavours: spicy kimchi on red mullet, horseradish sauce on crushed langoustine or herby lovage oil drizzled onto a “trou normand” (a mid-meal palate cleanser). Cold-steamed extractions and fermented vegetables set the scene and the chef works exclusively with stellar, purebred Gallic pro

Sushi Yoshinaga
Japanese · ★★ Michelin

This exceptional restaurant has left nothing to chance: ceramics designed by a Japanese artist, rosewood chopsticks set out on a small cedar tray, maple wood panelling and soft lighting. Sushi master Tomoyuki Yoshinaga crafts a feast of outstanding fish, including different varieties of fatty tuna, which he surgically prepares and seasons – all for the benefit of no more than 10 diners at a time. This culinary performance of high-flying precision covers textures, maturations, serving temperatures and a vast array of flavours depending on the omakase menu. In a lively, working-class enclave, this place serves good contemporary cuisine. Talented chef Thibaut Spiwack, whose CV includes Michelin-starred kitchens, finds original ways to showcase produce from the Paris region. The emphasis is on sustainable development and a desire to challenge the codes of gastronomy. Attractive set menu plus a few à la carte options at lunchtime; in the evening, a single set menu with several courses. A moment of gastronomic pleasure.

Maison Dubois
Modern Cuisine · ★ Michelin

The house spirit reigns supreme in this intimate fine dining restaurant with six tables and a confidential feel. Suffice to say, chef Arthur Dubois – who has clocked up experience in the restaurants of Jacques Maximin, Éric Frechon and Pierre Gagnaire, where he was sous-chef for several years – is in the business of the bespoke. Carefully selected ingredients, tried and tested know-how, impeccable technique: the chef is a dab hand at putting a new spin on classic cuisine. Indeed, the influence of his mentor on rue Balzac makes itself felt in his penchant for "satellite" variations on a theme,

Le Bristol is the quintessence of luxury, from its spa suites and superb formal garden to its rooftop pool and dining area with Louis XVI furnishings, mirrors, and tall French windows looking out onto the greenery. In the kitchen of the flagship restaurant, Arnaud Faye errs towards minimalism with his light and refined preparations – a purity of flavours that does not preclude generosity in the dishes. The ingredients are of course excellent, the cooking techniques and temperatures flawless; the bread is made on the premises from heirloom wheat varieties, the sauces are light yet highly concen

This small Italian pasta restaurant has broken free of traditional trattoria codes and embraced a more contemporary vibe, illustrated by the untreated, modern decor and long counter from which diners can admire the kitchen team at work. Dishes to share and a warm, cheerful mood are all part of the experience here. The chef rolls out fresh cuisine that abounds in crisp, bold flavours. A case in point is grilled cos lettuce, pine nut sauce and puttanesca seasoning, or his truly addictive gnocchi in ricotta and creamy smoked mozzarella. The lunch menu is quite as appealing as the mouthwatering à
