Some things never go out of fashion… The oldest stone walls of this quintessential Sologne coaching inn with a half-timbered, pink brick façade date back to the 17C. Former patrons include the likes of French stars Mistinguett and Maurice Chevalier. Settle in at your table in this timeless setting of solid oak beams, Gien earthenware and crystal, with a view onto the magnificent grounds planted with century-old trees. The chef cooks classics and dishes that smack of modern inspiration, whether using fish and seafood or meat – he has a penchant for game. Home to some exceptional vintages, the s

In the heart of Fontainebleau, this smart, low-key restaurant is the HQ of a Japanese chef who orchestrates a new take on pure-bred Gallic gastronomy whilst scrupulously respecting the seasons. Kunihisa Goto is a fan of French cuisine, wines and iconic produce. After training with the best, he reinvents the classics with panache, incorporating a host of Japanese ingredients: daikon, lotus roots, nori, shiso leaves, Wagyu beef… His version of the slow-cooked egg has become a must. Each dish is a masterclass of plating, balanced flavours and gourmet indulgence. Attentive, courteous service.

Côté Jardin
Creative, Modern Cuisine · ★ Michelin

This aptly named establishment is supplied by a market gardener who grows over 300 varieties of vegetables, fruit and herbs. Chef Arnaud Billard, a native of Maubeuge, is now at home on the left bank of the Loire on the road to Bourges. His tasty, spot-on market cuisine is clearly veggie focused, thanks to inspired, yet subtle associations together with an underlying fondness for citrus fruits. Dotted with Asian notes, the score also demonstrates the chef’s love of seafood. Examples include scallops on a bed of leeks, paired with a delicious yuzu kosho sauce, which is a paste made out of chili

La Table de Christophe Hay et Loïs Bée
Modern Cuisine, Creative · ★ Michelin

Opposite Limère golf course, Christophe Hay's second establishment sports a contemporary interior inspired by nature and the forest, the chef's main muses, together with vegetables from his garden. The huge open kitchen is in the hands of chef Loïs Bée, whose highly personal score, underpinned by confident technique, is nonetheless perfectly in tune with the house ethos. The delicate, seasonal cuisine is eco-conscious and favours short supply chains and game in season. Think Sologne trout, cucumber, verbena and tapioca; fillet and andouille of ostrich, parsley-flavoured viennoise, wild garlic,

In the centre of the village, this welcoming flower-decked place with a garden and terrace is a real oasis of calm. Cosy setting and cuisine that navigates between tradition and modernity (notably the melt-in-the-mouth pithivier pie, rum crème brûlée, pistachio ice cream), not forgetting Sologne game in season.

A venerable Montargis institution, located alongside the N7. For several generations, culinary tradition has been revisited with flair and generosity; do not miss out on the rather imposing dessert trolley.

In a historic village where the poet Max Jacob is buried, this authentically appointed traditional restaurant boasts stone walls, a coffered ceiling and a pretty terrace overlooking a square. The well-crafted culinary score draws on classical textbook roots. Examples include crisp scallops of sweetbread served with lashings of side dishes. Attentive, gracious service.

This restaurant, located in an old antique shop in the centre of the village, cannot fail but delight: a contemporary, elegant interior, a patio-terrace ideal in fine weather, and at the helm, a young couple who offer market-inspired dishes like this grilled octopus with black garlic and fregola sarda pasta, or rump of veal with polenta and cardamom.
