Discover the secrets hidden in the Casa-Palacio Mazarrasa (1756), a mecca for foodies that certainly makes an impression and continues to evolve! The culinary experience begins with welcome drinks and appetisers in the glass-paned pavilion or on the terrace, and culminates in elegant dining spaces with a rustic yet modern feel. Always sporting his trademark cap, chef Jesús Sánchez runs the restaurant with the invaluable support of wife Marián Martínez, who is in charge of the front of house. He remains consistently loyal to local ingredients, seasonality and to a firm commitment to sustainabil

La Bicicleta

The name of this restaurant occupying a large 18C house is deliberate as it reflects the professional relationship that chef Eduardo Quintana once had with cycling. This is highlighted in the saying by Albert Einstein at the entrance (“Life is like riding a bicycle – to keep your balance, you need to keep moving”) which influences his general attitude to life. It boasts a pleasant patio-terrace, where guests can savour appetisers, plus an attractive rustic-retro decor inside. The cuisine, which is particularly focused on locally sourced seasonal ingredients, is centred around three tasting men

This attractive large house by the main road boasts an unusual name (a type of sorrel that is found in fields of maize) and cuisine that comes as a pleasant surprise. It features a pleasant terrace, a gastro-bar with high tables perfect for tapas and raciones, plus a contemporary dining room with a rustic decor. The cooking here takes its inspiration from both the region and what’s in season, including top-quality local fish, delicious steak tartare, and tasty stews prepared with Pedresa chicken, a breed that is commonly known as “picasuelo” in Cantabria.

If a dining experience with picture-postcard views of the sea appeals to you, head to Sardinero beach where, on the first floor of the building known as Cormorán, you’ll find El Serbal. You’ll fall for all its culinary charms thanks to its honest approach and its roots in Cantabrian cooking, which is showcased here by an updated take on traditional cuisine that meets one of its key tenets: “to ensure that guests are happy and will want to return”. The à la carte, which is well complemented by three menus (Gastronomic, Tasting and a special Dom Perignon Moët Chandon option), champions the Canta

Solana is impressively situated just a few metres from the Santuario de la Bien Aparecida, the venerated patron saint of Cantabria. If you’re looking for a picture-postcard view of the Cantabrian mountains you won’t find a better location than this, where the views from your table transport guests to a world of green meadows in which cows can been seen grazing nearby. Chef Ignacio Solana, alongside his sister Inma (sommelier and front-of-house manager), showcases contemporary cuisine with strong traditional roots that is faithful to both the sea and the mountains but with a nod to tradition an

Located in the heart of the Parque Natural de las Marismas de Santoña, Victoria y Joyel, between the green mountains and the Cantabrian Sea, the Pico Velasco boutique hotel is a superb example of 17th-century Cantabrian civil architecture. In the tastefully renovated interior, Inés Aguirreburualde and award-winning chef Nacho Solana showcase a traditionally based modern cuisine that always aims to highlight the full value of local and seasonal ingredients. Choose between two tasting menus: Albiar (which translates as “sunrise”), and Sincio (a Cantabrian expression that is used to denote a desi

If you would like to eat in a really special setting, book a table at Casona del Judío, as it’s not every day that you get the chance to enjoy a Michelin-starred experience in an authentic 19C colonial-style property. Here, chef Sergio Bastard impresses guests by shining the spotlight on local ingredients as well as algae and herbs from the Cantabrian coast. He offers two tasting menus (Festival and Chef’s Table) on which guests can savour dishes influenced by the sea, with a fusion of textures and a constant focus on pinpoint presentation (we especially enjoyed the starters, such as the Verdi

A modest, friendly and authentic restaurant with no luxurious frills but plenty of charm. Its simple façade on the street corner conceals a welcoming dining room decorated in French bistro style and dominated by shades of green and white, with an old open-view bar, bare marble tables and other intimate and attractive details, such as the bright candles which add a romantic touch. The traditionally inspired contemporary cuisine (with the option of half-plates throughout) is not lacking in boldness thanks to the addition of exotic flavours, mainly Asian but also from Central and South America (s
