L'Ogustin

€€

Not far from the Cirque de Navacelles, in a small village on the southern edge of the limestone plateau that is the Causse du Larzac, Pricillia Lebon's restaurant is housed in a converted inn. Beneath the stone vaults, the inviting, cosy decor reflects the endearing personality of a chef who has come to this beautiful, isolated setting to cook. The surprise set menu celebrates the Larzac area, with ingredients sourced mainly via short supply chains (not least from local market gardens), as well as from mushroom and plant picking. Plants reign supreme in the intuitive, light and aromatic dishes

L'Alicanta has been on the scene for a while, perched on the banks of the River Jonte, in the exceptional setting of the Gorges du Tarn. The chef puts in a solid performance, his cooking is replete with distinct flavours and his dishes are brilliantly assembled. Everything here is home-made and the menu changes with every season. Absolutely delicious!

Le Saint Hilaire

Modern Cuisine · ★ Michelin

On the edge of the Cévennes, chef Sébastien Rath and his wife Gwladys are breathing new life into this old inn with a garden terrace and a lovely bright dining room decorated in a palette of soft hues. The chef's love of local produce never wavers, be it the ingredients (trout from Les Fumades fish farm, pigeon des Costières, fruit from the surrounding orchards, wild herbs etc), the cutlery on the tables or even the jeans manufactured in Lozère for his team! The blind menus reveal the inspirations of the seasons, every dish echoing the chef's sincerity and dedication.

In the Cévennes capital, this small restaurant with a low-key façade will set your tastebuds tingling. The chef wholeheartedly works with fresh seasonal produce as he deftly and savvily incorporates spices. An appetising score, unbeatable lunchtime menu and a lovely terrace for alfresco summer dining.

Auberge de Valestalière

Modern Cuisine

€€

This whitewashed roadside inn in the Cévennes boasts a terrace with views of the surrounding countryside. The interior decor is simple and straightforward (terracotta floors, wooden tables). Damien in the kitchen and Suzanne in the dining room pay homage to the Cévennes landscape and terroir and its produce (vegetables and wines): trout from Le Vigan served in a cold soup; chicken cooked with preserved lemon. Sincere and generous cooking.

Previously chef at Château de Mercuès, in the Lot, Philippe Combet serves up good seasonal cuisine, highlighting the region's produce. Truffle or asparagus menu, Quercy lamb... served by his pleasant and professional wife.

Modern Cuisine, Farm to table

In a tiny village deep in the heart of the Terrasses du Larzac vineyards, opposite the post office, SouKa (root in Occitan) has morphed into a cave à manger (dining wine cellar). Bargain-priced lunchtime menu and a concise à la carte cast of deftly crafted nostalgic dishes. Stand outs include slow-confit beef cheeks, smoked mashed potatoes and glazed carrots; roast calf’s head, steamed potatoes, gribiche sauce, without forgetting the sublime walnut pie flanked by apple purée. All of which washed down with wines from near and far; the wine list boasts several hundred references, is reasonably p

Maison Seed

Modern Cuisine

In a narrow pedestrian street of Millau, near the Fontaine du Mandarins, the dinky Maison Seed is the lair of a globe-trotting couple. A vaulted dining room provides the backdrop to indulgent, fusion-style dishes that incorporate oils, vinegars, sourdough bread, etc, all made in-house, and available to take home. An intimate, eco-conscious restaurant that combines flavours from near and far.
