Denmark’s oldest castle sits within a UNESCO Geopark, whose undulating landscape was carved out during the Ice Age. In 1937 the castle was transformed into a hotel and restaurant, and today it continues in this vocation, while offering great respect for both its history and the surrounding region. The seasonal multi-course menu is entitled ‘Time and Place’. ‘Time’ is evident in the atmospheric room, where thick whitewashed walls are broken up by huge glass-fronted wine rooms. ‘Place’ comes in the form of produce from the nearby fields, forests and seas, which features in carefully crafted, inn

A delightful destination for a romantic weekend, this 19th-century pavilion is located in a park that was historically the garden of a monastery. Today, the building houses both a classically decorated country house hotel and this charming conservatory restaurant, where every table has a view out over the Præstø Fjord. The room has a calming feel, putting the focus on meticulously presented dishes which blend classical French techniques with a more restrained Nordic vision; you might find spring salad accompanied by lumpfish roe and butter sauce made using saffron.

Inside, modern wood panelling blends with traditional whites and blues, and creates an elegance that is well-matched by the cooking. The concise à la carte – which can also be taken as a tasting menu – draws inspiration from the Danish larder, then adds some Japanese elements to an otherwise classic base to create dishes such as turbot with elderflower and asparagus blanquette sauce or candied Mikan mandarin with white chocolate namel
