Inveterate locavores Anne and Thomas Cabrol give absolute priority to ingredients sourced nearby and do their utmost to limit the establishment's ecological footprint. The kitchen makes the most of its surroundings, caught between the dry terroir of the Causse limestone plateaux, with its truffles and aromatic plants, and the humid Montagne Noire, rife with undergrowth treasures (berries, mushrooms, wild plants). Examples include their "bouillon de l'aurore", a root infusion with an aromatic bouquet and incomparable freshness derived from 35 plants and flowers; the Montagne Noire trout macerat

Jean-Marc Boyer, a true craftsman whose passion is unmistakable, draws his culinary inspiration from solitary walks in the surrounding hills. Aromatic herbs and wild garlic enhance colourful dishes that are rife with crisp, forthright flavours, such as wild asparagus with morels from the Montagne Noire, Banka trout with lomo bacon and sautéed broad beans or confit rhubarb with raspberries accompanied by rhubarb and Limousin cream cheese ice cream. He arranges everything into a single set menu, packed with surprises. The interior, designed by Régis Dho in a Japanese vein, provides the perfect f

This well-oiled machine on the banks of the River Orb, now home to two brothers – one a sommelier, the other a chef, was a cloth mill in a former life. Inside, granite and wood dominate the decor, while a glazed wine cellar stands in the centre as a reminder of the pivotal role played by wine here. The savvy wine list unveils a penchant for Languedoc-Roussillon (but not exclusively), with a host of insightful food and wine pairings. Chef Clément has opted for a southern slant that he interprets delicately and intelligently, as the fancy takes him. Friendly atmosphere courtesy of Benjamin's sea

The medieval city is emblematic of the time-honoured heritage of Carcassonne and its region… and the same could almost be said of Franck Putelat. Established at the foot of the city’s famous ramparts, this native of the Jura who has made the Aude his home, spins a succulent tale of land and sea in his contemporary, designer lair. Much of the produce comes from his large vegetable garden, as he cleverly reworks regional hits according to his mood and inspiration of the day. Attractive plating, lashings of flavour and suave finesse embody his spot-on repertory. Three examples that have become ic

La Table Lionel Giraud

The place is named after Abbé St Crescent, who in the Middle Ages opened his doors to pilgrims on the Camino de Santiago. The arcades and bare stones may be a throwback to the distant past, but today the decor is ultra-modern, with finely crafted black and white polished concrete floors and sculptural one-piece seats. Lionel Giraud, son of a restaurant owner, is a strong advocate of locally sourced produce. An inventive chef, he honours ingredients from the most noble (Mediterranean red tuna) to the most modest (green beans) and everything in between, such as an authentic Corbières buffalo moz

Gilles Goujon, sometimes nicknamed the "innkeeper of the Corbières", is credited with putting the tiny village of Fontjoncouse ((in the Aude département) on the map of French high-end gastronomy. His trademark? Sincerity and expertise. As his regulars know, he puts his heart and soul into every dish. With his sons Enzo (savoury dishes) and Axel (sweet) at his side, Goujon is in a league of his own when it comes to taking a back seat to the ingredients and letting them do the talking in all their simplicity – the mark of the greats. The ingredients are exceptional and he takes enormous pleasure

British chef Simon Scott worked his way from London to Provence, before setting up shop here in the Tarn département. The vivid red façade leads diners into a vibrant and cosy pop-inspired decor. This eclectic chef and master craftsman works exclusively with good-quality (local) ingredients, in a bid to serve his guests precise, colourful and tasty dishes that change regularly according to the market stalls. This Bistrot des Saveurs is certainly aptly named!

An Alter-Native – or another birth, even a rebirth – is how Gilles Goujon views this restaurant project. In Béziers, where he grew up and studied, the chef of the Auberge du Vieux Puits, who needs no introduction, is carving out a new niche: developing a concept of eco-responsible seafood- and plant-forward cuisine. With vegetables from the aquaponics garden and other treasures from the South of France, the executive chef cooks up appetisingly generous and no-nonsense dishes, such as his courgette rolls "Hommage à Roger Vergé". There is a pleasant terrace-patio for sunny days.
